Small fresh leaves that give off a palette of aromas and flavors, whose intensity varies from plant to plant, should always be present in our daily lives. Aromatic herbs are essential in cooking, both for the special touch they give in tasting and decoration, but also in the balance of our body, given the complex diversity of nutrients they offer.
Regular consumption of spices or aromatic herbs provides a significant reduction in the use of salt, for example, which reduces the risk associated with hypertension, that is, lower probability of negative cardiovascular stresses, one of the main generators of death worldwide, according to the World Health Organization. A concern also assumed by the Directorate-General of Health that, through the National Program for the Promotion of Healthy Food, alerts to the excess of salt consumption in Portugal. Each Portuguese ingests, on average, about 10.5 grams of salt a day, when the recommended maximum is 5 grams, the equivalent of one teaspoon.
“Herbs should only be added to foods at the end of their preparation since most of their properties are lost by the action of heat,” warned the heads of the Directorate General of Health in a letter published on the blog healthy and sustainable food or in the website of the General Directorate of Health). They point out that “a number of studies indicate that phytochemical substances appear to be responsible for the properties attributed to aromatic herbs, in particular: prevention of cancer, cardiovascular, reproductive and nervous functioning and as a stimulant of the digestive system, and an enabler of the immune system.”
By consuming aromatic herbs we are giving our body proteins, vitamins, minerals (calcium, phosphorus, sodium, potassium, and iron), fibers, volatile components (essential oils) and phytochemicals (they act as antioxidants, bactericides, antiviruses, phytosterols, and inducers or enzyme inhibitors).
Thus, a more aromatic diet prevents any negative stresses in the present and in the future.
