How to buy Garlic

The garlic heads should be round, formed and full, with the outside intact and without stains. The best option is always the biological ones and if possible the ones that have the smaller head.

The garlic cloves should be firm, wide and united. Avoid buying heads of garlic whose cloves are released, soft and withered. It does not matter if they are white or rosy, however, the taste of the latter can be a little softer.

Where to store

Garlic should be stored in a cool, dry, ventilated and not too hot place. If kept in moist and hot places, the garlic will quickly create mold and wither. Do not put the garlic directly in the refrigerator as it loses its aroma.

Garlic cloves should not be left hanging in the kitchen for too long, as they may dry out and remain bark only.

A good way to store a whole garlic head is to place it in a ceramic vessel with holes for ventilation.

How to peel

To peel garlic is only necessary to give a slight blow with the flattened part of the knife on the clove, thus the bark leaves more easily.

To peel a head of garlic fast, just place it inside a small jar and then shake it until the cloves are completely peeled.

To use garlic, the option may be to cut, chop, crush, grate or use it as a whole. If it is sliced or chopped the flavor is more present, but if crushed releases allicin more intensely, which makes the flavor more powerful.

How to take the garlic’s smell away

Rub hands in cold water, with salt, lemon or parsley. There are also stainless soaps that remove the smell of garlic, fish or other food. But the easiest and quickest way is to carefully pass the fingers and the palm of the hand on the blade of the stainless steel knife which we used to peel the garlic, and normally the smell disappears.

Fighting the garlic breath

There are several alternatives: suck cloves of India, chew anise seeds, coriander leaves, parsley or mint. Drinking a glass of wine also works.
