What types of sugar are there?

The market offers a wide variety of sugars and although an exhaustive description is difficult to find, here are the main examples presenting some of their characteristics:

Refined

The attractive white color of thin and uneven grains, easy to dissolve and mix, is part of our daily lives in the kitchen, restaurants or cafes. It contains 99.9% of sucrose, because of its refining that adds sulfur, among other chemicals, and eliminates all vitamins and minerals. In practice, we eat calories without any nutrients.

Crystallized

It is the most used sugar in the pharmaceutical industry, for example for the manufacture of syrups. The crystals are composed of 99.9% of sucrose, with white color and contain no coloring or moisture.

Icing sugar

The icing sugar is white and so fine that it looks more like dust. This type of sugar is obtained from the millet of crystallized sugar, to which starch is added to prevent the aggregation of crystals. This is one of the advantages of baking and decorating cakes and syrups.

Aspartame

Aspartame is a sweetener that contains only four calories per gram, it sugars up to 200 times more than regular refined sugar and is widely used to sweeten beverages. However, there is a lot of discrepancies about the damage this product can cause to the body. For example, when heated, this product loses its sweetening power and turns into methanol, which is toxic. Many people prefer to substitute light sugar, also called lean sugar, for its reduced caloric value. White sugar is a mixture of common sugar (sucrose) with sweetener (sweetener) and it sugars twice as much as regular sugar. Be aware that diabetics should not consume light sugar because its formulation contains common sugar (sucrose), which increases glucose levels in the blood.

Muscovado sugar does not undergo refining, it contains less chemical additives than white sugar and retains superior nutritional properties (vitamins B1, B2, and B6, calcium, magnesium, phosphorus, and potassium) and is less caloric. It is considered raw sugar, healthier than the traditional refined. The muscovado sugar has a brown color and a very aromatic flavor, very similar to sugar cane juice.

Brown sugar is also refined, but instead of white, it takes a golden color due to the maintenance of the molasses obtained by centrifugation. It is commonly used in recipes that have longer validity, such as cookies, among others.

Fructose

Fructose is a sugar extracted from fruits and corn. It contains no additives and is sweeter than traditional refined sugar, but induces a slower increase in blood sugar than other types of sugar.
