Sage is a sub-shrub of the Lamiaceae family, often cultivated in gardens as an aromatic condiment or simply for the beauty of its foliage and flowers. The Latin name of Salvia officinalis evokes its properties, because “salvare” means to save, to heal. The whole plant is strongly aromatic and has a warm and somewhat bitter taste. The medicinal use of sage is ancient.
