Herbaceous plant of the family Umbelliferae, 20 to 60 cm tall, widespread and cultivated throughout Europe and America. Quoted in the Bible, cilantro was one of the first aromatic plants used by man. In the Middle Ages and the Renaissance, coriander seeds were commonly used in the preparation of culinary dishes, medicines, and aphrodisiac potions.
All parts of the plant can be used. Its antiseptic and antiputrid action justifies its use for the preservation of meats in hot countries. It is used to facilitate digestion, thanks to its carminative, antispasmodic, and toning action on the nervous system.
